okay this apple pie with a twist is awesome!! i know “raw” apple pie – how good can it be right? for those who are confused … i didn’t forget to cook it – it’s not even a baked good!! the crust is made from nuts and dried fruit and the filling is well … apples! oh and the kream is made from nuts too! intrigued? if so the recipe is below …
apple pie and whipped cream with a twist
1 cup raw cashews
1/2 cup raw almonds
1 1/2 cup organic dates (soak for a few hours)
3 organic apples (thinly sliced)
juice of 1 organic orange
1 cup raw cashews (or macadamia nuts)
1/3 cup water
dash maple syrup
in a food processor, process nuts (leave a few chunks). sprinkle some of the nuts on your pan so the crust won’t stick. process your dates and then mix with the nuts. add a dash of vanilla and voila you have your crust. press the crust firmly into your pan. let apples sit in orange juice, cinnamon and nutmeg for an hour. add 1/2 cup blended dates – mix. place on top of pie crust. pop in fridge for an hour. meanwhile blend extra cashews with water, maple syrup and vanilla until smooth (add extra water or nuts if you need too). plop “kream” on top of pie and enjoy!!
